An Afternoon At The Petting Zoo


This afternoon I decided to take our kids to the petting zoo. I really needed them to take a good nap so I could clean our floors without itty bitty foot prints. We had a blast and YAY... my plan worked!

What A Way To End A Weekend!

Our weekend definitely ended on a good note. Yesterday the kiddos went swimming for the first time this year. They had a blast, but the water was FREEZING!!! I babysat one of Emma's best friends and she ended up sleeping over last night, a definite plus for the kiddos.  Now that our relaxing and fun weekend has come to an end, it's time to start a fresh new week.

Easy and Delicious Homemade Chicken Nuggets

These Chicken Nuggets are a hit in our house, I hope you enjoy them as much as we do!

INGREDIENTS:
About 1lb Chicken Breasts Cut Up

Ritz Crackers Crushed, about 1 1/2 rolls or 1 3/4 Cup (I never measure I just crush and use as needed)  
1 Cup Buttermilk

DIRECTIONS:
  1.  Cut chicken pieces into nugget size pieces
  2.  Marinate Chicken in 1 Cup buttermilk for up to 2 days (I've done it both for 20 minutes and 2 days, either way they turn out wonderlicious)
  3. Preheat oven to 425 degrees
  4. After marinating, crush the Ritz crackers
  5. Shake off excess buttermilk and coat the chicken with Ritz Crackers. (I use a spoon so my hands don't get all sticky and gooey)
  6. Put chicken on a lined baking sheet and bake for 20 minutes at 425 degrees


1. Cut Chicken Breasts into little nugget pieces

2. Put Chicken pieces in a container and pour 1 cup buttermilk over and make sure they are all covered. Seal and let sit in the fridge for up to 2 days. (I've let it marinate for 20 minutes and 2 days, both of them turned out wonderlicious!)

3. Crush Ritz Crackers
4. Coat Chicken Pieces and Bake at 425 Degrees for 20 minutes.

6. Serve and Enjoy!

**After the Chicken Nuggets are coated with the crackers you can freeze them and use for later use**
**If Cooking from frozen add an extra 5 minutes**

(I'll double and triple this batch and freeze some for later use because they are so popular in our house)

EASY HONEY MUSTARD SAUCE:
Pour some Yellow Mustard in a bowl and mix in Agave to your taste... DELICIOUS!

My Mother's Day

MY MOTHER'S DAY WAS FABULOUS!

A while ago my husband asked me what I wanted for Mother's Day and I thought about it for about 5 minutes and said, "I want you to cook for me." He just looked at me with this face of horror! He has always claimed he can cook but the only thing I've seen is sandwiches and grilled cheeses. Well folks, when I woke up on Mother's Day morning, my husband was cooking me my FAVORITE breakfast... Eggs Benedict Casserole with homemade hollandaise sauce. It turned out perfect. Surprisingly, my hubster really can cook and it was SO DELICIOUS! 


The rest of our day was spent going to church, John and the kids taking me surprise shopping, and then home for the rest of the family to come over for dinner and playing at the park. 

Did I mention my husband wouldn't let me pick up the house, he cleaned up after the kids and me... it was a fabulous, relaxing, and such a fun day! Thanks babe for the BEST Mother's Day Ever!!!
