CUCUMBER SANDWICHES


These sandwiches are always a hit at a party or potluck with no leftovers to take home. My mom gave me this recipe. They are super easy and perfect for spring/summer!

INGREDIENTS:
1-2 Loaves of bread
1 small jar of real mayo (I've used light before and it still seems great)
1/2 packet of Ranch (I used the original dip mix)
2 slices of onion chopped and diced
1-2 English cucumbers
Lemon Pepper

DIRECTIONS:
Mix the mayonnaise, 1/2 packet of ranch, and 2 slices of onion (chopped and diced very small) together and refrigerate over night.

Cut the bread into little circles:
I used the big side of a jigger to make the circles that I bought specifically for this, any round cookie cutter or small biscuit cutter would work.

Peel and thinly slice the cucumbers
(You can make the cucumbers fancy by leaving some green on the sides)

Cover the bread with the dip mix.

Place the cucumbers on top of the bread.

Sprinkle with Lemon Pepper and Serve.

Helpful Hint:I always cut the cucumbers, bread, and make the dip the night before and put them together no more than 2 hours prior to serving. 

Don't forget to keep sandwiches refrigerated if making them before the party.

Easy Easter Egg Hat Craft

EASY EASTER EGG HAT CRAFT:




Today I'm having an easter egg hunt for some of the kiddos in the neighborhood and our friends. I decided to have a fun, easy, and frugal friendly craft to have at the hunt for the kids to do. I decided to do an egg hat for the egg hunt. My kids had so much fun decorating their hat and are refusing to take them off. They love their egg hat!!


WHAT YOU NEED:

-Construction Paper
-Scissors
-Double Sided Tape
-Hot Glue Gun
-Crayons. glitter, stickers, paint (whatever sounds most fun)
*OOPS I forgot to put the crayons, stickers, ect. in the picture*
-An Easter egg coloring page or bunny printed and cut out

DIRECTIONS:
1. Cut out two strips of construction paper out about 4 inches wide and long enough that when put together it will fit around the child's head.

2. Tape or glue the two pieces of construction paper together.

3. Cut out the egg or Easter bunny coloring page and cut out construction paper to be the egg's background.

4. Tape or glue the coloring page to the construction paper.

5. Glue the egg to the construction paper


7. Let the kiddos color and decorate it while it's still flat.

 8. Measure the hat to their head and tape the ends together.

9. Put the hat on and ENJOY!!!

Hi Everyone... I'm BACK!

My sister just had her baby 2 months early. Both are doing well and we are very excited about our new baby cousin/nephew. All the baby talk made me think of a review I did when I first started this blog. I think the Tuckaroo is an AMAZING bib that everyone with a baby/toddler should have. Visiting My Family!


I'm out of town visiting my family and am excited to see some of my friends I grew up with for a fun 12 day vacation. It's a rare occurrence that all my sisters are together at once, mostly because I have this huge fear of flying, but I got on the plane with my two kids and we are here...YAY! Thank you to the guy who noticed I was scared and kept telling me it was normal and it's OK, he and his wife definitely helped calm me down! Thank you Lord for getting us to our destination safely!

My sister is due with her new baby boy in June and my family got together for the most amazing  baby shower I've ever been to this past weekend. I will definitely be doing a post on that shower, it was truly a 5 star baby shower and something worth looking at, especially if you are going to be throwing a shower anytime soon!

I finally felt the baby kick... I was so EXCITED! I had been trying all day long and every time up until this moment he stopped as soon as I put my hand on my sister's belly.
It's been so much fun so far and I can't wait to see what the rest of this trip will bring and share it with you. I'll be out of town till the 20th but will still be posting and doing random blog hops when I get a chance.

CHOCOLATE CHERRY CHEESECAKE CUPS

Yesterday was my husband's birthday. I wanted to make him a special birthday cake that had some of his favorite things in it. I came across Chocolate Cherry Cheesecake Cups, his three favorite things. I just had to make it for him. Everyone loved them including the kids so I thought I would share the recipe I found.

Ingredients:
24 Paper Muffin Liners
1 16 oz refrigerator ready-to-slice chocolate chip cookie dough
1 Cup Sugar
1/4 Cup Flour
2 pkg of 8oz soft cream cheese
1/2 Cup soft butter
1 tsp. Vanilla
2 Eggs
1 - 21 oz can Cherry Pie Filling



Directions:

Put 24 paper liners in muffin tins. Then slice well chilled dough into 24 slices or break apart the cookie dough and put one cookie on the bottom of each muffin tin. Next, ccombine sugar, flour, cream cheese, butter, vanilla, and eggs and beat for 1 minute. Fill each muffin tin 2/3 full of cheesecake mixture and bake at 375 for 35-45 minutes. Cool completely and top with cherry pie filling. I put mine in the fridge till it was time to serve after they were done and ready to go.


I baked my cheesecake cups for 35 minutes and they were a little brown, next time I will do them a little less than 35 minutes. It all depends on your oven.

Something I Can't Live Without: CUISINART SINGLE SERVE BREWING SYSTEM


The Cuisinart Single Serve Brewing System
IS AMAZING
I don't think I can go a day without my Cuisinart. You can brew coffee, tea, hot cocoa and have hot water in an instant! We have used this when we have the whole family over and coffee is made for everyone in less time than it would take us to brew a huge pot in a regular coffee maker. Now that it's getting hot where we live, I've moved onto the iced coffee with my Cuisinart instead of hot Coffee... I just love this brewing system!

The Cuisinart has many features that are amazing. 
In my opinion, out of all the k cup coffee makers, this one is by far the best!

My Favorite Product Features:
  • 5 different cup sizes: 4 0z (iced coffee), 6 oz, 8 oz, 10 oz, and a 12 0z.
  • 80 0z Removable Water Reservoir: There is no need for constant refill, this holds a lot of water! 
  • Removable Drip Tray: I remove the tray for my iced coffees and my larger oz coffees, a great feature to have!
  • Rinse Control: This is amazing, you can clean the inside of the brew chamber. My friend, who is a tea-aholic, refuses to drink tea where coffee comes out. She couldn't tell I used coffee before her cup of tea... it was a test and the Cuisinart passed with flying colors.
  • Reusable K-Cup Coffee Filter: I haven't used this yet, but will be using it soon on my dunkin donuts coffee. This is good to have to enjoy your favorite ground coffee.
  • Hot Water Button: I've used this to make instant soup, tea from a bag, and hot cocoa. It was very useful when I was giving my daughter chicken broth when she was sick. 
I love my Cuisinart Single Serve Brewing System. We gave away our old coffee maker and will NEVER go back, this machine is AMAZING and something I can't live without!!

Right now at Costco they have the Cuisinart Single Serve Brewing System for a great price of $174.99 compared to $199.99 at Bed Bath and Beyond. What a great deal!!!
Also if you go in the Costco store to get the Cuisinart, I think it was cheaper when I checked today by almost 10 dollars at our Costco.

What Brings Joy to a Child!

Are you ever amazed with the little things that bring a smile to your child's face? My son just loves garbage trucks. Every time the recycle truck comes we try to get a good seat outside and watch it go down our street twice. Carson loves it just the same and sometimes more each week when the truck goes by. I love the excitement on his face and the guy driving the truck always waves and will sometime honk for Carson. Thank you Recycle Man, we love it!! It's the little things that brings joy to my child!
