EASY Black Bean and Chicken Enchiladas... YUMMY

EASY BLACK BEAN AND CHICKEN ENCHILADAS



Ingredients:
1 can bushs black beans (drained)
1 can green chiles (4 oz, Drained)
1 large can white chicken (Drained)
1 can Las Palmas green chile sauce (28 oz)
1 medium onion diced or chopped
1 1/2 tsp cumin powder
1/2 tsp. ceyenne pepper (I didn't use)
2 cups Cheddar Cheese
6 Burrito Size Tortillas

Directions:

1. Preheat oven to 350 degrees
2. Saute Onions until tender
3. Add green chiles, chicken and spices to onions and continue simmering for 5 minutes
4. Add beans and 2 oz of sauce and continue simmering for 5 minutes
5. Fill tortillas with mixture and a little bit of cheese
6. Place in a greased 9x13 pyrex
7. Top with remaining green chile sauce and cheese
8. Cover with greased aluminum foil
9. Bake at 350 degrees for 30-35 minutes until sauce is bubbly and hot all the way through

This recipe is super easy to throw together!

Slow Cooker Pulled Pork Sandwiches


I have had numerous requests to post the pulled pork recipe, so I decided to post this today and tomorrow I'll post the enchilada recipe.

This is my favorite recipe for pulled pork sandwiches. I could eat them all day long! I hope you enjoy them as much as I do!

Ingredients:
1 boneless pork shoulder roast, 2 1/2 to 3 lbs. (I use the pork loin roast)
1 cup chopped onion (I used a little less than a cup)
12 oz. of your favorite barbecue sauce (I used Sweet Baby Rays, it's the best!)
3-4 tablespoons of Honey
Dash of hot pepper (I didn't use)


Directions:
Place pork rast in a lightly greased 31/2 to 5 quart slow cooker. 
Combine onion, barbecue sauce, honey and hot pepper. 
Pour over Pork Roast.
Cover and cook for 7-9 hours
Shred with a fork, it should just fall apart.
Serve on toasted buns.

I served my pulled pork sandwiches with homemade cole slaw and watermelon today, ENJOY!

PIGGY TAILS!!

I CAN FINALLY DO PIGGY TAILS!

For those of you that don't know last October we had a HAIR CATASTROPHE in my house! My darling daughter Emma was playing beauty shop and dress up. She was so excited, I had set her up with a brush and pretend make up in her bathroom. Little did I know, she had snuck to my bathroom to play with my brushes and apparently scissors. The next thing I know Emma goes, "Mommy Look!" I turn and my first reaction is, "Oh Emma you learned how to put a clip in your hair GREAT JOB sweetie!" The closer I got I noticed her hair looked funny. Then I frantically started feeling her hair and started to get loud, "WHERE'S THE CLIP, WHERE'S THE CLIP?!" There was no clip and her long beautiful hair was gone. I screamed and started freaking out so bad that my husband thought someone was badly hurt. We immediately took her to the nearest children's hair salon and had it evened out as much as possible. The scissors are now in a cupboard as high as I could get them. Even I have to get a step stool to get them down. Thank goodness she only took off her hair and I've grown fond of her short hairdo... it took me a while, but I got there!

Yesterday Emma asked me to put her hair in piggy tails, and guess what... I GOT ALL HER HAIR IN PIGGY TAILS!  I was so excited and she loved it. She was showing it off at school and couldn't wait to show Daddy when he got home from work. YAY, her hair is starting to grow back, but either way, I love my Emmy Em!

When my kids see me drink coffee they always want some. Finally, I came up with what we call in this household, coffee milk. They love it and they think they are getting the same thing. No more whining or crying for mommy's coffee!!

Hot Turkey Salad

Ingredients:
2 cups Elbow Macaroni Noodles
1.25 lbs. Ground Turkey
2 Cups Shredded Cheddar Cheese
1 bottle of your favorite Italian Dressing
I bag of Salad Mix ( I used Dole greener selection)
Cherry Tomatoes
Cucumbers (sliced)

1. Cook the Noodles and Brown the Ground Turkey
2. As soon as the noodles are cooked immediately drain and have it be the bottom layer in the bowl
4. Cover the noodles with cheese
5. Cover the Cheese with the Ground Turkey (drained)
This way the cheese melts between the noodles and the turkey
6. Next dump the bag of salad mix on top of the ground turkey and cover with Tomatoes and Cucumbers (I didn't have any cucumbers on hand, but I always use them in this salad)

7. Now add about half a bottle of your favorite Italian dressing

8. Serve and Enjoy!

Directions:
1. Cook the noodles and brown the ground turkey.
2. Once the noodles are cooked, drain and make it the bottom layer in large serving bowl.
3. Immediately add the cheese on top  to of the hot cooked noodles.
4. Drain the ground turkey and add on top of the cheese (the cheese should melt the meat and the noodles together)
5. Add your Salad mix on top of the ground turkey.
6. Chop up some cucumbers and add those on top of the salad and throw some cherry tomatoes on top as well.
7. Finally, add about a half a bottle of your favorite  Italian dressing over the salad (or as much as you like, I add a half a bottle when we are having guests or taking it to a pot luck) My new favorite dressing is Girard's Champagne dressing and it's REALLY GOOD on this salad also!!!!
8. Serve and Enjoy


How to make this kid friendly:
Before I added the lettuce, I took a bowl full of the noodles, melted cheese, and ground turkey and set it aside. My kids like ranch, so I added ranch to theirs, mixed it up and served it with fruit and carrots. They ate it all up.


If you are not wanting to put all the dressing your salad, here's what you can do:
Instead of putting half the bottle of dressing on the salad, you can wait  and add it after it's been served. That's what I did last night so I could use the Girard's Champagne dressing and my husband could have it with the Italian dressing.

Seven Things About Me:

1. My middle name is Hope, not my first. I was named after my great grandma and was always going to be called Hope no matter what. My parents left the other name to my oldest sister. She thought it would be cool to have her best friend and her have sisters with the same name, so that is where my first name came from. Needless to say it didn't sound good as a middle name so it became my first. However, I will not tell you my first name because I'm very fond of Hope!

2.  Growing up I was a "cheer queer". I loved cheerleading and still do, I put my heart and soul into it. As I said in a previous post, I secretly want to be a cheerleading coach. Watching the all-star squad practice at my daughter's gym is totally giving me the itch.

3. I was on the Food Network for Fairy Tale Brownies when I was in College. These really are the most amazing brownies out there(my favorite is the toffee one)!!! I can't believe they actually put me in the show. I was one of those people trying the food and saying how great it was. The funniest part is I'm scratching my nose or face with my middle finger as I'm talking... CLASSY. I guess that's what nerves do to you on camera. EMBARRASSING!

4. I love to ski. Anytime I have the chance to ski, count me in!!!

5. One of the things on my bucket list is to run a half marathon. One of these days soon I'm going to do it. I would really really like to have a running partner while I train!

6. I have 3 sisters... I am number 3 out of 4 girls in my family. We didn't always get along when we were young but as we all have gown up we love each other dearly and would do anything for each other!

7. I have the most amazing husband in the world and 2 great kidlets, I adore my family!!

Smile on My Face!

I have started my second week of boot camp and got up at 4:50 this morning to get there. It’s getting easier every time I go. Today we did a lot of different exercises using weights and doing squats. I have a feeling my rear and legs are going to be wobbly all day long. I pushed myself as hard as I could and am very proud of myself. By the time I got home I was ready to climb back into bed. Instead I decided to do a blog hop and write a post. Then I hear footsteps and a faint little voice saying, Mommy, your beautiful!”  It was my precious daughter Emma, she had just woken up and crawled out of bed. Hearing that put a smile on my face and I gave her the biggest hug. I love it when Emma says things like that, it's just so sweet! The only time I don’t like it is when Emma says sweet things as she’s getting in trouble. She’s a smart little goober. I love my little Emmy Em!
When I get a little down or frustrated with something all I have to do is go to my kids and be around them. No matter what we are doing they always seem to do or say something to make me smile and cherish the good things in life!

My New Best Friend: Fitness Gear 24" Foam Roller

I've been doing boot camp for a week now and it's been kicking my toosh. I'm sore all the time but am loving it! Lately my new best friend has become my trusty foam roller. I roll on it every night while I'm relaxing watching TV, I roll on it while my kids are napping, pretty much anytime I have a chance to sit, I am rolling on the foam roller. It's a definite must have!

I have the Fitness Gear 24" Foam Roller that I bought at Dicks Sporting Goods store. I absolutely love it. The one I have came with a DVD to instruct you how to work out with it and how to use it. Using the foam roller is just as good as going and getting a sports massage, but MUCH CHEAPER. It helps reduce soreness in your muscles and stiffness that limits your range of motion. There are lots of other things that the foam roller is known for helping, but I am using it for soreness and stiffness at the moment. The foam roller is a miracle worker for for my muscles and like I said before, it has become my new best friend. I feel so much better after rolling on it for a while, I just love it! Not only does the foam roller help reduce my soreness, but it's so relaxing! It hurts while your on it, but for me it hurts so good! I CAN'T BELIEVE IT'S ALREADY BEEN 5 YEARS!!! I am married to the love of my life! He is my best friend the most AMAZING husband ever, and the bestest Dad in the world!
